Like all flours, Nuchia Original Chia Seed Flour should always be sifted before use. Nuchia recommends using as small a vessel as possible when baking with Chia Seed Flour. Large vessels do not disperse heat as well to the center and can leave it uncooked when the outer edges are finished.
Proper Flour Measuring
Texture and Appearance
Nuchia Original Chia Seed Flour holds on to moisture and requires a slightly longer baking time than recipes made with all-purpose flour. Nuchia recommends increasing bake-time for conversion recipes by about 10% to 20%. If you use a toothpick or a knife to test doneness, the Chia will pull the batter together and away from the tester, leaving it looking dry before it is actually done.
This added moisture protects against over cooking, but can leave the finished product with a slightly soggy texture, although it is cooked through. Using both Original Chia Seeds and Original Chia Seed Flour in a single recipe is not recommended for this reason as well. This moisture also causes the product to stick to cooking vessels more. Nuchia recommends both lining and greasing all cooking vessels when possible. Non-stick cooking vessels are best.
Original Chia Seed Flour is contains organic brown rice flour. When baked the rice flour becomes medium to dark brown in color, no matter what the original appearance of the batter may have been.
Storage
Nuchia recommends storing Original Chia Seed Flour in the refrigerator to ensure freshness. Once incorporated into cooked products, refrigeration is only necessary for those with major dairy ingredients, such as cheesecakes or cream cheese icing. However, like all baked goods, high room temperature can spoil products if left too long before consumption.

Using Chia Seed
